This Shawarma recipe is adequate for 4 persons
We will need:
600 g (21 oz.) of boneless chicken breast
- Trim the breast, cut it in half horizontally, and slice it into thin slices.
For the marinade:
2 tbsp yogurt, 2 tsp salt, 1 tsp ginger powder, 2 tsp paprika, 1/2 tsp white pepper, 1/2 tsp ground cardamom, 1/2 tsp nutmeg, 1/4 teacup (3 tbsp) of lemon juice, 3 tbsp white vinegar or apple cider vinegar, 3 tbsp olive oil, and 3 mashed garlic cloves.
* You can omit any spice if you don't have it.
- Add all the ingredients into a bowl, and mix them well.
- Add the chicken slices into the marinade, mix them well until all the chicken slices are covered with the marinade.
- Let the chicken marinate for at least half an hour, the more you leave it, the better.
For the garlic sauce:
1 egg white, 2 mashed garlic cloves, 1 tsp salt, 1 tsp lemon juice, 1 tsp white vinegar, and vegetable oil.
- Mix all the ingredients with a hand blender while gradually add the vegetable oil until you have a creamy, foamy sauce.
For the pepper sauce:
- Mix 2 tbsp sweet pepper paste and 4 tbsp olive oil.
To fry the shawarma:
- Add a good amount of oil, and let it heat.
- Fry only a little of the marinated chicken at once, so the shawarma won't lose its water
Finally, to make the wraps:
- On a Saj bread, spread the pepper sauce, and the garlic sauce.
- Add the shawarma, more of garlic sauce, minced parsley, pickles, and pomegranate molasses.
- wrap the bread and cover it with the oil left from frying the shawarma, and toast the wraps on a hot pan.
The Shawarma Wraps are ready to be served.
