Aalo Kachori Recipe in English: Ingredients: -Maida (All-purpose flour) sifted 2 Cups -Namak (Salt) ½ tsp or to taste -Ghee 3 tbs -Pani (Water) chilled 1 Cup or as required -Oil 1 tbs -Zeera (Cumin seeds) 1 tsp -Rai dana (Mustard seeds) ½ tsp -Hari mirch (Green chili) chopped 2-3 -Aalo (Potatoes) boiled & mashed 2 medium -Adrak lehsan paste (Ginger garlic paste) 1 tsp -Lal mirch powder (Red chili powder) 1 tsp or to taste -Namak (Salt) 1 tsp or to taste -Dhania powder (Coriander powder) 2 tsp -Haldee powder (Turmeric powder) ½ tsp -Pyaz (Onion) chopped 1 medium -Besan (Gram flour) 2 tbs -Cooking oil for frying Directions: -In bowl,add all-purpose flour,salt,ghee and mix well. -Gradually add chilled water and knead until dough is formed. -Cover with wet cloth and let it rest for 20 minutes. -In frying pan,add oil,cumin,mustard seeds and mix. -Add green chilies and mix. -Add mashed potatoes and mix well. -Add ginger garlic paste,red chili powder,salt,coriander powder,turmeric powder and onion,mix well and cook for 5 minutes. -Add gram flour and mix well. -Let it cool down. -Knead dough again and cut into pieces. -Take a small dough and make a balls. -On working surface,apply oil and flattened the balls with the help of the fingers. -Take a potato filling and make a balls. -Now place potato ball in flatten dough,warp and seal the edges and make a ball again. -Cover the balls with wet cloth for 5 minutes. -Grease hands with oil,take a stuffed ball and flattened with the help of the palms. -In wok,heat cooking oil and fry on low flame until golden brown. Recipe in Urdu: Ajza: -Maida (All-purpose flour) sifted 2 Cups -Namak (Salt) ½ tsp or to taste -Ghee 3 tbs -Pani (Water) chilled 1 Cup or as required -Oil 1 tbs -Zeera (Cumin seeds) 1 tsp -Rai dana (Mustard seeds) ½ tsp -Hari mirch (Green chili) chopped 2-3 -Aalo (Potatoes) boiled & mashed 2 medium -Adrak lehsan paste (Ginger garlic paste) 1 tsp -Lal mirch powder (Red chili powder) 1 tsp or to taste -Namak (Salt) 1 tsp or to taste -Dhania powder (Coriander powder) 2 tsp -Haldee powder (Turmeric powder) ½ tsp -Pyaz (Onion) chopped 1 medium -Besan (Gram flour) 2 tbs -Cooking oil for frying Directions: -Bowl mein maida,namak aur ghee dal ker ache tarhan mix ker lein. -Thora thoar ker ka thanda pani shamil karein aur ghond ker dough tayyar ker lein. -Wet cloth sa dhak ker 20 minutes kliya rakh dein. -Frying pan mein oil,zeera aur rai dana dal ker mix karein. -Hari mirch dal ker mix ker lein. -Mashed aalo shamil karein aur ache tarhan mix ker lein. -Adrak lehsan paste,lal mirch powder,namak,dhania powder,haldee powder aur pyaz dal ker ache tarhan mix karein aur 5 minutes kliya paka lein. -Besan dal ker ache tarhan mix ker lein. -Mixture ko thanda ker lein. -Dough ko dubara ghond lein aur pieces mein cut ker lein. -Chota dough lein aur balls bana lein. -Working surface per oil laga lein aur balls ko fingers ki madad sa flat ker lein. -Aalo filling lein aur balls bana lein. -Ab aalo balls ko flatten dough mein rakh ker wrap karein aur edges ko seal ker ka dubara ball bana lein. -Balls ko wet cloth sa 5 minutes kliya dhak dein. -Haathon ko oil sa grease karein aur stuffed balls ko palms ki madad sa flat ker lein. -Karhai mein oil garam karein aur halki ancch per golden brown hunay tak fry ker lein.
