Medium Spiced Minced Lamb Curry with Tomatoes, Peppers, Garam Masala, and Yoghurt. RECIPE: Rogan Josh by MistyRicardo (aka rshome123) Version 0.90 Ingredients 45-60ml Oil (vegetable or sunflower) 2 pieces of Cassia Bark, approx 2 inches long 1 Asian Bay Leaf 1 Clove 0.5 Onion (medium onion or equivalent quantity of slices), halved lengthwise and cut into into fine slices. Approx peeled weight 70g 0.33 Red Pepper, cut into approx 1 inch square pieces. Approx weight 40g 0.5 tsp Fennel Seeds 0.5 tsp of Freshly Ground Toasted Cumin Seeds 0.5 tsp of Freshly Ground Toasted Coriander Seeds 1 Black Cardamom (seeds of) 1 TBSP Garlic & Ginger paste (I use 60/40 garlic/ginger) 1 tsp dried Methi, finely crushed in-between fingers 1.5 tsp Mix Powder 2 tsp Kashmiri Chilli powder 0.5 tsp Tandoori Masala 0.33 tsp Salt 0.25 tsp Black Pepper (Freshly Ground) Very finely chopped Fresh Coriander stalks and leaves, 1 Tbsp of each. 330ml Base Gravy (kept hot in a separate pan) 1.5 TBSP double concentrated tomato purée mixed with 4 TBSP water, OR 5 TBSP blended tinned plum tomatoes Pre-cooked Chicken/Lamb/Beef etc. 5 Fresh Cherry Tomatoes 2 TBSP Natural Yoghurt 1 tsp Jaggery or Sugar (Optional) 0.25 tsp Garam Masala Method 1. Half the onion lengthways. Cut the half required for this recipe into fine slices, separating off separate layers. 2. Cut 0.33 Red Peppers into inch square pieces. 3. In a frying pan add 45-60 ml oil (3-4 TBSP) on medium/high heat. 4. Add 2 pieces of Cassia Bark, 1 Asian Bay Leaf, and 1 Clove. Cook for 30 seconds, stirring. 5. Add Onion slices, Red Pepper pieces, 0.5 tsp Fennel Seeds, the ground toasted Cumin & Coriander seeds, and the seeds of 1 Black Cardamom. Continue cooking and stirring for 1 min. 6. Add 1 TBSP Garlic/Ginger paste, and fry, stirring until sizzling subsides. 7. Add 1.5 tsp Mix Powder, 2 tsp Kashmiri Chilli Powder, 0.33 tsp Salt, 0.25 tsp Black Pepper, 0.5 tsp Tandoori Masala, and 1 tsp dried Methi. 8. Fry for 20-30 seconds, initially adding 30ml Base Gravy to help prevent burning, and stirring constantly. Use the flat of the spoon to ensure flat and even distribution. 9. Add the Tomato paste. Turn up the heat to high, while stirring constantly until the oil separates, and tiny craters appear. 10. Add 1 TBSP Coriander stalks. 11. Add Pre-cooked Chicken/Lamb/Beef etc. and mix well into the sauce. 12. Add 75ml of Base Gravy, stir into the sauce, and leave on high heat (not stirring) until the sauce is reduced by about a half, and craters form again. 13. Add a second 75ml of Base Gravy, stirring and scraping the bottom and sides of the pan once when first added, allowing the sauce to reduce again. 14. Add 5 Fresh Cherry Tomatoes. 15. Add the final 150ml of Base Gravy, 1 tsp Jaggery or sugar (optional), stirring and scraping once when first added. Leave to cook on high heat for 3-4 minutes, or until the desired consistency (quite thick) is reached, and the oil has separated. Add a little more Base Gravy if desired. 16. Add 2 TBSP Natural Yoghurt, and 0.25 tsp Garam Masala. Stir and cook for 30-60 more seconds. 17. Retrieve and discard the Cassia Bark pieces, Asian Bay Leaf and Clove. 18. Serve, sprinkling the coriander leaves on top. Notes 1. Spoon Measurements are level. i.e. 1 tsp = 5ml, 1 TBSP = 15ml. 2. You can try any 'regular' Base Gravy and Mix Powder with this recipe. It has been tried and testing using my Mix Powder and Base recipes. See www.bircurries.co.uk for more information. 3. The 1 tsp of Jaggery or Sugar is optional. I suggest you taste the Rogan Josh near the end of cooking before deciding if it is desired. 4.
