Carrot Salad with Lemon Dressing (50 cal per serving)

Lemon-Carrot Salad is a dish I came up with when I was very young...like, 8 or 9 years old? We had a Meyer lemon tree in our backyard so pretty much everything I cooked as a child had lemons in it. If you are using Meyer lemons, note that they are much milder than conventional lemons. This is a good side dish with any roasted meat.
