And I had to try his winner. Unfortunately, it requires a corn extract which costs a crazy amount of money, so I just shelved it and went on with life. However, my wife is awesome, so she bought me the extract for Christmas.
I finally got a chance to make it recently for my dad's birthday to serve with gumbo. Unfortunately, I was rushed and failed to realize exactly what the recipe entailed until the last minute, so it's not 100% true to the exact recipe. That said, it turned out pretty stinking good.
In the future, I think I will swap out some parmesan cheese for some almond flour (better texture/less cheese flavor) as well as add some baby corn (more corn flavor, extra texture).
So no fear, this recipe will be revisited in the near future.
