This is a great low point summer salad. I am really enjoying it and thought I would share it.

Corn and Tomato Salsa

Black Bean and Corn Summer Salad
1 cup corn
1 cup black beans, drained and rinsed
½ green pepper, seeded and diced
½ onion, diced
½ cup canned hot pepper (to taste)
1 medium tomato diced
3 TBL chopped cilantro (1 TBL, if using lightly dried or to taste)
3 TBL fresh lime juice or more to taste
½ tsp salt
Dice vegetables and mix all ingredients together. Chill for at least 30 minutes and serve.
