Hey Everyone - thanks for stopping by to check out my meal prep this week. I hope you enjoy. I've been doing these meal preps for over two years and they have me helped me lose 72 pounds!
This week's meal prep was excellent! We had the 5 Ingredient Orange Chicken with Cauliflower Fried Rice and Stir Fry Veggies. This is a great low point easy recipe to make! We also had one of my favorite meals - Butterball Turkey Sausage with Cajun Seasoned Potatoes and Brussel Sprouts. For dessert we had cheesecake this week! It was all so yummy! Cauliflower Fried Rice
3 bags of Green Giant Cauliflower Rice Medley
1 Tbsp Minced Garlic
4 Tbsp Soy Sauce
1 packet of Sun Bird Fried Rice Seasoning
1 Egg
Put the cauliflower in a pot on medium heat and just salt and pepper it and let warm up to where it's not frozen. Then add in the garlic, soy sauce, and seasoning packet. Mix well and let simmer for a few minutes. Push the rice to the side of the pan and crack the egg into the pan and scramble it. Once it is done mix it into the rice.

Turkey Sausage - 6 Points per serving
Slice sausage and place on baking sheet. Bake in oven at 400 degrees for 20 minutes, take it out and turn each piece over and then bake for and additional 10 minutes. This is so delicious - definitely worth trying!
Diced Potatoes - Points will vary based on your serving size. Mine came out to 5 points per serving.
Yellow Potatoes
Olive Oil Spray
Cajun Seasoning
Cumin
Chili Powder
Garlic Powder
Salt & Pepper
Dice potatoes into small pieces. Spray with olive oil spray and season to your taste with the cajun seasoning, cumin, chili powder, garlic powder, salt & pepper. Bake in oven at 400 degrees for 45 minutes or you can cook in Air Fryer for about 20 - 22 minutes. I like mine really crispy! These were so delicious!
Brussel Sprouts - 0 Points per serving
Brussel sprouts - use however much you want
Avocado Oil Spray
Salt & Pepper
Cumin
Chili Powder
Garlic Powder
Chop the brussel sprouts into small pieces. Spray generously with avocado oil spray and season to your taste with the salt, pepper, cumin, chili powder, and garlic powder. Bake in oven at 400 degrees for about 45 minutes.

Weight Watchers Pumpkin Cheesecake - 1 Pt per slice makes 8 Servings

INGREDIENTS:
3 eggs
3 cups nonfat Greek yogurt (I prefer Fage 0%)
1 small box instant sugar free/fat free vanilla or cheesecake pudding mix
1/2 tbsp. caramel extract
3/4 cup 100% pure canned pumpkin
1 tsp. pumpkin pie spice
1 tsp. cinnamon
3 tbsp. stevia
DIRECTION:
Preheat oven to 350 degrees
In a medium mixing bowl, add eggs, canned pumpkin, caramel extract, cinnamon, pumpkin pie spice, and stevia until well blended
Whisk in dry pudding and yogurt completely
Lightly spray pie dish or 9 inch spring form pan with non-stick cooking spray and pour in batter
Bake for 30 minutes
Let cool for 15-20 minutes before covering with plastic wrap and chilling overnight
