Potato & Artichoke Dish A great side dish for seafood or poultry. A delicious Vegetarian or Vegan main dish, accompany with just made bread. Serves 3-4 as a side, 2-3 as a main dish. INGREDIENTS 5 artichokes 5 potatoes 2 -3 garlic cloves, peeled and flattened with a knife extra virgin olive oil, to taste small bunch fresh parsley or your favorite herb, minced (I used dried oregano) 1 fresh lemon, cut in half salt & pepper to taste water or vegetable broth, between 200ml to 400ml, as needed METHOD 1. Clean the artichokes as shown in my How to Clean Artichokes video on YouTube.com/TasteofItaly: /watch/MnOm-_B09Sx0m 2. Cut the artichokes into very thin slices and drop in a bowl of water with either lemon juice or white wine vinegar to keep them from turning brown. 3. Peel the potatoes, rinse, and dice them (cut them the size of dice) 4. In a large and wide pot or skillet with a cover, sauté the garlic and minced parsley (or favorite herb) in some extra virgin olive oil for a couple of minutes over medium heat. 5. Add the potatoes and well-drained artichokes and raise the heat to medium-high. Toss vegetables every few minutes so that it gets cooked externally/gets some color. 6. When most of the vegetables have browned a bit, lower the heat to medium-low and add salt, pepper and 200ml/7oz of water. Mix well and cover. Cook for about 15-20 minutes. 7. Taste the potatoes for doneness. If you prefer larger pieces of potatoes, then partially cook the potatoes before adding the artcihokes. 8. Once cooked, you could remove the cover and turn up the heat to get some crispiness on those veggies, add extra olive oil if necessary. Stir every few minutes to make sure nothing burns. 9. Remove from heat once you are happy with the degree of crispiness. !0. To plate: Add a swirl of best quality extra virgin olive oil to the entire pot or to each individual plate. Sprinkle some extra minced herbs on the finished dish for garnish. Buon Appetito!
