Roasting vegetables with out oil are easy and delicious and FAT FREE!
Preheat oven to 425.
Mix together the vegetables you like (I always add onions.) The possibilities are endless.
Bell peppers, carrots, broccoli, cauliflower, brussel sprouts, potatoes, sweet potatoes, asparagus, zucchini and yellow squash are among some of our favorites.
After you combine your vegetables, add your wet ingredients & desired seasonings.
Wet ingredients:
Aquafaba (liquid from a can of garbonzo beans) I always start with this and add couple of the following based on the flavor I'm going for:
Braggs aminos, or soy sauce
Coco aminios
Honey
BBQ sauce
Vinegar- balsamic, apple cider, rice
Lemon or lime juice
My go to seasonings:
Garlic powder
Onion powder
No salt seasoning
Italian seasoning
Smoked paprika
Cook for 20-25 minutes based on your vegetables and desired doneness. Potatoes should be able to poke with a fork, I like some good brown coloring on my vegetables.
