Zaalouk is one of my favorite Moroccan foods. As we continue our Moroccan food during Ramadan series ( sorry I know these videos make you hungry) we highlight zaalouk, a Moroccan eggplant salad that can be served as a warm salad or cold. Moroccan food relies on spices, and fresh ingredients. In this Zaalouk recipe we use cumin, paprika, salt, pepper, garlic, parsley, and lemon for our flavors. The eggplants are roasted in the oven before being mixed with cherry tomatoes. We took the liberty of using cherry tomatoes and adding some eggs on top. We used American mashed potatoes as well, I had to listen to the pregnant woman in the kitchen! I hope you liked our zaalouk as we continue to explore Moroccan food in our Bohemian Kitchen. Today we have a French taste tester, Clement, who compares the dish to Ratatouille, a popular dish in french cuisine. Andreja compares the dish to shakshouka. Shakshouka is a popular Maghrebi dish.
