Greek traditional souvlaki is made of pork meat cut in small pieces and skewered in small rods. Hence the name "souvlaki" (very small rod/skewer). We don't marinade it but at the end of grilling, we add salt and freshly ground oregano. We can marinade it if we like but then it's not the traditional Greek souvlaki. We usually marinate larger pieces of meat.
