Please click this link to donate: https://www.paypal.me/suhasdishes Cabbage Salad Ingredients: 250 g cabbage, finely shredded 100 g red cabbage, finely shredded 4 green onions, finely chopped 3 medium tomatos (500 g), diced 2 medium cucumbers (200 g), diced 1/2 small bunch fresh mint, chopped (25 g) 2 minced garlic + 1/2 tsp salt 1/3 cup (80 ml) apple cider vinegar or lemon juice 1/3 cup (80 ml) extra virgin olive oil 1/2 tsp salt Pureed Mujadara Ingredients: 2 cups (400 g) green lentils 8 cups water (around 2 liters) 1/2 cup (100 g) Egyptian or Calrose rice 1/2 cup (120 ml) extra virgin olive oil 2 cups (250 g) chopped onions 1 1/2 tsp salt 1 tsp ground cumin 1/4 tsp black pepper 🌹Instructions🌹 1. In a medium pot place washed lentils and water. Bring to a boil on high heat, then reduce the heat and simmer covered on low heat for 30 minutes or until fully cooked and very soft. 2. Strain the lentils and save the water. Take 1 cup and a half of the water and set aside. 3. Puree the cooked lentils with what's left water in the food processor and place it back into the same pot and set aside. 4. Place the rice with the saved lentils water in a medium saucepan and bring to a boil. Simmer on low heat for about 7 minutes (the rice will continue cooking with the lentil puree). 5. At the same time, start sautéing the onions. In a medium pan, place chopped onions and olive oil. Sautee on high heat stirring occasionally until golden for about 7 minutes. 6. Add cooked onions with olive oil, cooked rice, salt, cumin, and black pepper to the lentils puree. 7. Place the pot on medium heat and bring to a boil, stirring constantly. Reduce the heat to low and continue stirring for about 5 minutes. Scoop it immediately in soup plates and let cool for 15 minutes. 8. Meanwhile, mix well the salad ingredients in a large bowl and serve with the mujadara. #pureedmujadara #mujadaramsafayeh #suhasdishes #vegan #mujadara #vegetarian #mjadara #instafood #lebanesecuisine
